The ‘Legendary Cocoas’ family continues to grow. This new addition comes to us from one of the small communities in Santa Bárbara, in north-west Honduras - a cocoa of extraordinary quality. As in the rest of the Department and country, coffee is one of the most famous crops in Rio Seco. However, this fertile land also produces a variety of Criollo cocoa bean - the Maya Rojo, with its strong flavour and bitterness accompanied by subtle hints of red fruits. While maintaining its qualities with a gentle LIGHT ROAST technique and to respect the hard work of local farmers, we have created an unmixed chocolate that leaves all its nuances intact. Rio Seco is another opportunity to taste the unique and distinctive characteristics of a lesser-known cocoa variety.
