Chocolate brownie

-  23 g flour
-    3 large eggs
-  25 g sugar
-  35 g unrefined cane sugar
-  50 g butter
-  28 g Sampaka 70% dark chocolate chips for melting
-  25 g nuts (walnuts, sliced almonds, chopped hazelnuts, as you prefer)
-    2 g Sampaka dark red 21% cocoa powder (about 1 dessertspoon)
-    1 Vanilla pod
-  Zest of half an orange
-    1 g salt


Step 1. Place the room temperature butter sugar, salt, vanilla and orange zest into a mixer and whip until it turns whitish

Step 2. Melt the chocolate in the microwave and cool to about 38° C so it does not melt the butter

Step 3. Add the melted chocolate to the previously whipped butter at short intervals

Step 4. Remove from mixer and put aside

Step 5. Mix the flour with the cocoa and sieve it to remove impurities and lumps

Step 6.  Mix the flour with the cocoa and the butter using a spatula with gentle movements to prevent the butter going flat

Step 7. Finally, add your choice of nuts

Step 8. Grease a mould with butter and pour in the brownie dough

Step 9. Cook in pre-heated oven at 160° C for 30 to 40 minutes depending on the oven
